Vegan and Gluten Free Banana Pumpkin Spice Cake is the kind of cake that’s healthy enough to eat for breakfast, yet indulgent enough to dress up with ice cream or frosting for dessert.
the cake is fluffy, moist, dense and everything you could ever want from a cake.
if you want to add a little festive touch, you can create a spider web of melted chocolate on the top like i did.


however, hopefully yours will be a little more professional looking, ha! hey, i get an A for effort, right?
some orange and black sprinkles are super fun of course but you don’t need any toppings because it’s basically banana bread in cake form.
if you’re looking for more of an indulgent dessert, some cream cheese frosting would be perfect!
the base of the cake is made with gluten free oat flour and almond flour. to keep the cake completely gluten free, just make sure the oat flour is certified gluten-free also.

this cake is THICK and the texture is out of this world.
you could turn the cake into a bread if you would like! it would probably need another 10 minutes to bake, but you would have to monitor the baking process.
the easiest way to tell if my banana bread or cake is done is to stick a toothpick or knife into the bread. if it comes out with any batter, it’s not done.

oat flour
almond flour
flax meal
baking powder
baking soda
organic raw cane sugar
pumpkin pie spice
cinnamon
vanilla extract
mashed bananas
unsweetened dairy free milk
if you think this has a slightly orange color, it does! i did add a little bit of natural food dye to make the cake orange and festive, but it just didn’t show up well lol.
if you want to try that yourself, go for it, and depending on the brand you use, it might work!

2 cups gluten free oat flour
1 cup almond flour
1 tsp baking powder
1 tsp baking soda
1/2 cup organic raw cane sugar
1/4 cup flax meal
2 tsp pumpkin pie spice
1 tsp cinnamon
1 tsp vanilla extract
1 cup mashed overripe banana
1 cup unsweetened dairy free milk
- anything you would like for topping
Directions
- preheat the oven to 350 degrees.
- mix the banana cake ingredients in a mixing bowl until a thick batter forms.
- transfer to a well-greased 8 x 8 baking pan. bake at 350 degrees for 42-45 minutes.
- let the cake cool down and set and then enjoy!
