why yes, i did in fact have cookies for breakfast! two of The Best Healthy Vegan Cookies to be exact. it’s friday, my husband is off for two more days and it is the last day of upbeetandkaleingit holiday dessert week. basically, going all out is the only option. surprisingly, The Best Healthy Vegan Cookies only have a total of 7 tbsp coconut sugar in the entire recipe if you don’t include a chocolate drizzle. incredible right?! no worries, they taste sweet enough though :).

buttery, caramel pecans that have slowly cooked on the stove are added to the center of peanut butter rich cooke dough that melts in your mouth.

it’s pretty close to heaven if you ask me, i think this recipe will be a total hit with everyone, vegan or not!

ah, i sure do LOVE all things peanut butter, pecan and chocolate. you could add some shredded coconut to the top too!! sea salt flakes would be amazing but just a tiny bit because these cookies aren’t super sweet and the saltiness helps balance that out.

Ingredients

  • pecans
  • 1 and 1/4 cup chopped raw pecans

  • 1/2 stick vegan butter (used country crock plant butter)

  • 1/2 cup unsweetened almond milk or dairy free milk

  • 3 tbsp coconut sugar

  • cookies
  • 1 cup almond flour

  • 1/2 cup gluten free all purpose flour (used arrowhead mills)

  • 4 tbsp coconut sugar

  • 1 tsp baking powder

  • 2 tbsp avocado oil or melted coconut oil

  • 1/2 cup very smooth and creamy peanut butter- best that it’s runny or else add a little more almond milk

  • 4 tbsp unsweetened almond milk or dairy free milk

  • 1/4 tsp almond extract

Directions

  • add the pecan ingredients to a medium-large pan and stir well. cook on medium-high heat for about 5-6 minutes and stir often to prevent burning. most of the liquid should be absorbed and they should be slightly caramelized.
  • next, mix the cookie ingredients together in a bowl and first add the dry ones before mixing in the wet ones.
  • roll the dough into balls and use your finger or an instrument of similar size to make a well in the center of each cookie. fill the hole withย the pecans.
  • bake at 350 degrees for 16 minutes. let the cookies cool completely so they set and don’t fall apart- this is super important. drizzle with chocolate if you would like and enjoy!
