Strawberries and Cream Protein Yogurt Dream Cookies

Ingredients

  • 1 cup dairy-free yogurt
    1/3 cup vanilla protein powder
    1 cup freeze-dried strawberries
    nut or seed butter for topping (about 1 tbsp per cookie-optional)

    chocolate coating
    1 and 1/4 cup chocolate chips
    1 tablespoon coconut oil

Directions

  • in a mixing bowl, combine dairy-free yogurt, vanilla protein powder, and freeze-dried strawberries. mix until well combined.


  • line a plate or baking sheet with parchment paper.


  • take the yogurt mixture and form it into cookie shapes on the parchment-lined plate.


  • place the plate in the freezer and let the cookies freeze for at least 1 hour.


  • after 1 hour, remove the cookies from the freezer. if desired, top each cookie with a dollop of nut or seed butter.


  • return the cookies to the freezer and let them freeze for an additional 2 hours.


  • in a microwave-safe bowl, melt the chocolate chips and coconut oil together. stir until smooth and let the mixture cool down slightly.


  • dip each frozen cookie into the melted chocolate mixture, ensuring it’s completely coated.


  • place the chocolate-coated cookies back on the parchment-lined plate and return them to the freezer for another 1 hour, or until the chocolate hardens.


  • once the chocolate has set, remove the cookies from the freezer and let them thaw for a few minutes before serving.
