Raw Date Sweetened Blueberry Cheesecake

happy tuesday everyone from Raw Date Sweetened Blueberry Cheesecake, my newest blog recipe! you’re going to love this healthy vegan cheesecake that requires absolutely no baking!

making vegan cheesecakes is one of my favorite things to do, seriously!

it’s so fun and i love the turnout. the crust is made with oats, dates, dairy free milk and almond butter. sounds super simple right?

the filling is easy too and there’s even protein in Raw Date Sweetened Blueberry Cheesecake thanks to tofu!

instead of using all raw cashews, i went with tofu and cashews. the combination is perfection and makes for a silky smooth filling with amazing flavor.

the blueberry color is just so gorgeous and vibrant.

the filling is made with freeze dried blueberries and then you can always add a blueberry jam on top with or without added sugar.

jam isn’t even necessary though if you don’t want to add any because the dates add enough sweetness.

the good news about this cheesecake is that it’s very versatile. if you happen to not be a fan of blueberries, you can always change up the flavor.

by omitting the blueberries altogether, you will have plain vanilla cheesecake.

if you are looking for an easy replacement for blueberries, i would suggest strawberries.

for the filling, you can use freeze dried strawberries and then a strawberry jam or preserve for the top!

the same goes for raspberries, those would also be an excellent alternative to blueberries.

Raw Date Sweetened Blueberry Cheesecake

Ingredients

  • crust
  • 2 cups gluten free old fashioned oats

  • 10 pitted large medjool dates

  • 1/3 cup runny almond butter

  • 1/4 cup vanilla dairy free unsweetened milk


  • filling
  • 1 cup raw cashews soaked in hot water for 2 hours then rinsed and drained

  • 1 cup unsweetened dairy free milk

  • 1.2 ounces freeze dried blueberries

  • 14 ounces tofu

  • 7 large medjool dates

  • 1 tsp vanilla extract

  • 1/4 cup melted coconut oil or avocado oil

  • blueberry jam if wanted

Directions

  • add all crust ingredients to a food processor and pulse until a thick dough forms.
  • add to a round 8 x 8 inch cake pan.
  • blend the filling ingredients in a high powered blender until a smooth consistency forms. add to the top of the crust.
  • place in the freezer for 5-7 hours or until completely firm before you slice and serve the cheesecake. run your knife under hot water before cutting each slice of the cheesecake.
  • before serving, let the cheesecake thaw until it’s easy enough to cut into with a fork. store in the freezer in an airtight container for up to 2 weeks.
