Peanut Butter and Jam Pumpkin Spice Fudge is the BEST freezer treat to have on hand! it’s easy to make and totally nostalgic, everyone will love this recipe.

if you’re a fan of healthier desserts that are high in healthy fats, this is a fantastic option.

the ingredient list is super minimal and you can find everything you need in just about any grocery store, no fancy ingredients.

the fudge is creamy and really easy to store in the freezer. it thaws really quickly thanks to the runny peanut butter and avocado oil, so you don’t need to let it thaw much at all!

while i used peanut butter for a classic flavor, you can definitely switch things up with almond butter, cashew butter or even sunbutter.

there are tons of nut and seed butter nowadays, so go with whatever flavors you like!

the pumpkin spice flavor comes solely from pumpkin pie spice seasoning. it adds a delicious fall twist and just the right amount of spice, but you can definitely omit it if you would like.

for the jam, i went with store-bought blueberry and strawberry, and just mixed them together. when you can’t choose a flavor, why not both?!

you can always make your own but i am trying to keep my recipes as simple as possible, especially with baby boy coming so soon!

peanut butter

coconut flour

avocado oil (can use melted coconut oil)

maple syrup

pumpkin pie seasoning

vanilla extract

store bought jam

if you would like, you can add a scoop or two of protein powder to the the fudge! one scoop shouldn’t change the texture much. if you add two scoops, perhaps add a little more avocado oil, but you might not need to.

the good thing is that this is a very forgiving recipe.

coconut flour is the binder here, and protein powder would simply make the texture a little more doughy, but it would still be fudge-like!

Ingredients

  • 1 cup very creamy/runny peanut butter

  • 1/3 cup maple syrup

  • 1/3 cup avocado oil (or melted coconut oil)

  • 1 tsp vanilla extract

  • 1/3 cup + 1 tbsp coconut flour

  • 1 tsp pumpkin pie seasoning

  • jam of your choosing

Directions

  • add all ingredients but the jam to a mixing bowl and stir until a thick batter-like consistency forms.
  • whisk well so there are no lumps. then, add to a parchment lined bread loaf pan.
  • place in the freezer for 2 hours, remove, and add jam to the top.
  • place back in the freezer for 5-6 hours and then cut into slices.
  • store in the freezer in an airtight container and enjoy!
