Ingredients

  • for the jam:
    10 ounces frozen raspberries
    1 cup water
    1/2 teaspoon cinnamon
    1 tablespoon maple syrup
    for the protein yogurt layer:
    1 cup thick and creamy dairy-free yogurt
    1/3 cup vanilla protein powder
    1/3 cup peanut butter
    1 tablespoon maple syrup
    1 teaspoon vanilla extract
    toppings:
    additional peanut butter for drizzling
    sliced bananas (optional)

Directions

  • prepare the jam:
    -in a saucepan, combine the frozen raspberries, water, cinnamon, and maple syrup.
    bring the mixture to a simmer over medium heat, stirring occasionally.
    -continue to cook until the raspberries break down and the mixture thickens (about 10 minutes).
    remove from heat and let it cool.
  • prepare the protein yogurt layer:
    -in a mixing bowl, combine the dairy-free yogurt, vanilla protein powder, peanut butter, maple syrup, and vanilla extract.
    -mix well until all the ingredients are fully combined.
  • assemble the yogurt bark:
    -line a baking sheet with parchment paper.
    -spread the protein yogurt mixture evenly over the parchment paper, forming a smooth layer.
  • add the jam:
    -spoon the cooled raspberry jam over the yogurt layer, spreading it evenly.
    -drizzle additional peanut butter on top for extra flavor.
