if i could choose to eat one dish for the rest of the month….Orange Peanut Mushrooms with Rice. it’s so hearty and is a perfect dish for vegans and non-vegans alike! if you are a meat eater, the “meaty” mushrooms are super substantial and packed with flavor.
the sauce is out of this world and y’all know that i pride myself in my sauces. if you’re serving a dish with a sub par sauce…it’s not even worth it.
it took me two times to perfect this sauce, which isn’t that much! i knew it needed something citrus and oranges go all too well with peanut butter.
the star of this dish…obviously the mushrooms but hey, the rice is good too!
one of my favorite varieties is short grain brown rice and i bought some the other week, so this dish was the perfect opportunity to use it.
i made enough for three cups worth cooked, so just follow the directions according to the package on the rice.
to dress it up a little, when it rice was done cooking, i added 2 tbsp of vegan sour cream, onion powder, garlic powder and a little bit of sea salt.
ok, if you’re not a fan of mushrooms, this dish might not be for you lol, BUT maybe think about replacing the mushrooms with another vegetable.
of course the texture won’t be the same, but the sauce is so powerful, that the veggie you use won’t really matter much.
sweet potatoes, zucchini, Brussels sprouts and more would be amazing options but monitor the cooking time as it may vary.

Orange Peanut Mushrooms with RiceCourse: 30 Minutes, Lunch & Dinner, Main DishesDifficulty: Easy
recipe yields 3-4 servings depending on portion size
16 ounces sliced cremini mushrooms
1/2 cup chopped onions
1 tsp umami seasoning
1 tbsp liquid aminos
1/2 tbsp garlic powder
1/2 tbsp onion powder
1 cup unsweetened plain almond milk
2 and 1/2 cups vegetable broth
1/4 cup creamy peanut butter
juice of one large orange
3-4 cups cooked rice
2 tbsp vegan sour cream (used good karma foods)
1 tsp onion powder
1 tsp garlic powder
sea salt to taste
- add the mushrooms, onions, seasonings, liquid aminos, almond milk and 1 and 1/2 cups of the vegetable broth.
- cook on medium-high for 22 minutes and stir often. you can cook it on a lower heat if you want, just monitor the time. after 22 minutes, most of the liquid should be absorbed, so then add 1 more cup of vegetable broth and the peanut butter.
- stir and cook another couple of minutes or so until everything is warmed through and the sauce is thick.
- for the rice, cook according to package directions and add in the seasoning and sour cream. serve with the mushroom sauce and enjoy
