Incredible No Bake Carrot Cake Cheesecake Crumble Bars

Ingredients

  • 1/2 cup vanilla protein powder
    1 cup almond flour (can add more if texture is not firm enough)
    1 tbsp cinnamon
    1/3 cup creamy almond butter or cashew butter
    1/4 tsp almond extract
    1/4 cup thick coconut yogurt
    3 tbsp maple syrup
    1 tsp vanilla extract
    dash of almond extract
    1/2 cup grated carrots
    1/3 cup raisins

    for the filling:
    8 ounces vegan cream cheese
    1/2 cup coconut cream (should be solid)
    1/3 cup lakanto powdered sugar

    for the crumble topping:
    2 tsp cinnamon
    1/8 cup coconut sugar
    1/2 cup almond flour
    1 tsp vanilla extract
    2 tbsp dairy free yogurt

Directions

  • in a large mixing bowl, combine the vanilla protein powder, almond flour, and cinnamon.

  • add the creamy almond or cashew butter, almond extract, coconut yogurt, maple syrup, vanilla extract, and a dash of almond extract to the dry ingredients. mix until well combined.

  • fold in the grated carrots and raisins until evenly distributed throughout the mixture.

  • press the mixture into the bottom of a lined bread loaf pan or 8 x 8 to form the base layer. place it in the freezer while you prepare the filling.

  • in another mixing bowl, beat together the vegan cream cheese, coconut cream, and lakanto powdered sugar until smooth and creamy. spread this mixture evenly over the chilled base layer.
  • in a separate bowl, combine the cinnamon, coconut sugar, almond flour, vanilla extract, and dairy-free yogurt to create the crumble topping. mix until crumbly.

  • sprinkle the crumble topping over the cream cheese layer. once set, remove the bars from the freezer and let them thaw before slicing and serving.



  • store the bars in the freezer in an airtight container but IMPORTANT- thaw before eating because the raisins will be rock hard!
