well helloooo to Healthy and Easy Vegan Baked Cheese Fries…we’ve been waiting for you! this recipe is super nourishing, requires minimal ingredients and the flavor is 10/10.
potatoes, more potatoes and cheesy yum things….these are a few of my favorite things! one thing i refused to ever give up going vegan was cheese fries.
nowadays, they just look a little different. sometimes i eat healthy versions like this one…and sometimes i do not. i’m all about balance and indulging every now and then.

one of the many beautiful things about potatoes are that there are TONS to choose from. our options aren’t limited. if my hubby hadn’t requested sweet potatoes, i would have used yukon gold or idaho potatoes.
don’t get me wrong, i LOVE sweet potatoes but i’m usually going to opt for regular ole potatoes when it comes to fries.
you can use whatever you want/have on hand! they’re going to bake the same for the most part anyways.

i bake the sweet potatoes at 400 degrees for 30 minutes and the key to that extra crispy factor on the outside is broiling! you only broil them for 3 minutes on high at the end because no one wants a burnt potato.
alright, we’re covered on the potato side so how about discussing the cheeeeeese sauce a bit!
this is cool…i used parsnips! you can use the following though if you don’t like parsnips or can’t get ahold of them.
- sweet potatoes (yes, more sweet p)
- regular potatoes
- carrots
basically, you’re going to want to use a root veggie because when we boil them, they get super tender and blend really well.

in terms of other toppings, there are too many options to even begin listing. you could make these into chili fries with jalapeรฑo on top.
marinara would be super yum on top of the fries and beneath the cheese sauce, ya know…pizza fries?
and they’re plenty good enough where you don’t need anything else but the actual cheese. even though it’s made from a vegetable, this sauce somehow tastes JUST like cheese. believe me, you may have to see for yourself but then let me know once ya do!

my husband will tell you, i will legit never turn down a fry as long as it’s vegan. i’m not super picky when it comes to regular fries but i am when i make sweet potato versions.
the sauce that i’m having it with has to be at least somewhat savory to balance out the sweetness from the sweet potato.
while the parsnips do have a bit of sweetness, it’s balanced out by dijon mustard, garlic, nutritional yeast, sea salt, pickled jalapeรฑo and unsweetened plain dairy free milk. yes, you read that right, the key to this glorious sauce is pickled jalapeรฑo, which i bought at Trader Joe’s!

Healthy and Easy Vegan Baked Cheese Fries

3-4 large parsnips cut into thick slices
water for boiling
1 cup unsweetened plain dairy free milk
2.5 tbsp nutritional yeast
1 tsp dijon mustard
2-3 pickled jalapeno slices
1 tsp minced garlic
1/4 tsp onion powder
1/4 (or more) tsp sea salt
- fries
3 medium size sweet potatoes cut into about 3/4 inch thick slices
1 tbsp avocado oil
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp sea salt
Directions
- pre heat the oven to 400 degrees. coat the sweet potatoes with the seasoning + oil and bake for 30 minutes. broil on high at the end for 2-3 minutes.
- for the cheese sauce, boil the parsnips in water for about 20 minutes or until they’re super tender.
- rinse and drain the parsnips and add to a blender with the other sauce ingredients.
- blend on high until a smooth sauce forms and enjoy with the sweet potato fries!
