Healthier Vegan and Gluten Free Thin Mint Cookies are the new cookies on the block. they’re a classic comfort food made vegan and gluten-free by yours truly. with minimal ingredients, you can have this beloved cookie made within under 15 minutes.
these are one of my childhood favorite cookies, so i had to veganize them! i have an older thin mint recipe, but this one is better if i do say so myself!
my new version is so on point that you won’t even notice much of a difference between these and the real thing!
actual thin mints are smaller and crunchier but they will never measure up to Healthier Vegan and Gluten Free Thin Mint Cookies in terms of quality and deliciousness.
there’s just enough sweetness by the way and that’s the key. sometimes cookies are so laden with sugar that we can’t taste the other ingredients.
with just 1/4 cup maple syrup, both the chocolate and peppermint extract shine through, but neither are overpowering.
peppermint extract is strong stuff, so you’re only going to need 1/2 tsp in the entire recipe but you can add a dash more if you would like. i think 1/2 tsp does it though!
the center, OH MY GOSH THE CENTER. it’s a divine bite. minty, chocolate-y, fresh and perfectly sweet.
depending on the size and thinness of your cookies, you’re going to bake them anywhere from 10-13 minutes. that’s why it’s important to watch them closely!
mine were done at 13 and a little on the larger side.

Healthier Vegan and Gluten Free Thin Mint CookiesCourse: Cookies, Desserts
1 cup almond flour
1/3 cup cacao powder
1/4 cup flax meal
1/4 cup maple syrup
1/4 cup runnier sunflower seed butter or almond butter
1/4 cup unsweetened almond milk
1/2 tsp peppermint extract
1 tsp vanilla extract
- chocolate coating
1 and 1/4 cup chocolate chips
2 tbsp coconut oil
- preheat the oven to 350 degrees.
- mix all cookie ingredients in a bowl until the batter is thick and well-combined. mold into cookies and flatten. i was able to make 9.
- bake on a parchment lined baking tray at 350 degrees for 10-13 minutes depending on the size and thickness. cool completely and then dip in the chocolate sauce (melt chocolate and coconut oil).
- coat well and place in the fridge for an hour until they harden. store in an airtight container at room temp or the fridge and enjoy!
