Ingredients

  • 1/2 cup almond flour
    1/4 cup oat flour
    1/4 cup cocoa powder
    1/4 cup water
    1/4 cup dairy-free yogurt
    2 tablespoons vegan melted butter
    6 tablespoons coconut sugar
    1/2 teaspoon vanilla extract
    1/2 teaspoon baking powder
    1/4 teaspoon baking soda
    1/2 tablespoon ground flaxseeds + 1.5 tablespoons water (to make a flax egg)

  • a few tbsp of low sugar chocolate chips if wanted

Directions

  • preheat your oven to 350°f (175°c). grease a small skillet or oven-safe dish with a bit of vegan butter or oil. i used the our place tiny cast iron which is 6.5-inch.
  • in a small bowl, mix the ground flaxseeds and water. let it sit for a couple of minutes until it thickens to form a flax egg.
  • in a large mixing bowl, combine the almond flour, oat flour, cocoa powder, coconut sugar, baking powder, and baking soda. mix well to combine.

  • in another bowl, whisk together the water, dairy-free yogurt, melted vegan butter, vanilla extract, and the prepared flax egg until smooth.

  • pour the wet ingredients into the dry ingredients and stir until everything is well combined and you have a thick, smooth batter. then, add chocolate chips if desired.

  • pour the batter into the prepared skillet, spreading it out evenly.

  • bake in the preheated oven for 15-20 minutes- 18 was perfect.

  • remove the skillet from the oven and let it cool for a few minutes before serving.

  • optionally, you can serve it warm with toppings like vegan ice cream and caramel.
