Easy Vegan Tortellini Bake

let’s make dinner easy, delicious and fun with my newest recipe, Easy Vegan Tortellini Bake! this recipe isn’t even homemade and it’s one of the easiest recipes to put together. you can have a hearty dinner made in under 35 minutes.

dinner just got tastier because hellloooooo, tortellini aka one of life’s greatest comfort foods!

this recipe was sitting in my head for awhile and i finally picked up vegan tortellini from the store.

there are few different brands that i have seen in various grocery stores, but Kite Hill still remains my favorite!

thus far, i have found their tortellini at sprouts and whole foods, but check store locators to see where it is near you.

if you don’t have access to vegan tortellini, you could try this recipe with pasta, but if it’s uncooked, you may have to add more liquid than i did.

although i did not cook the tortellini before baking it in the oven, the tortellini is soft and cooks well with less liquid.

uncooked, hard pasta is going to need more, so just adjust accordingly.

on top of vegan tortellini, you’re going to need some marinara, vegan cheese and vegetable broth.

for the cheese, i went with two different kinds- vegan mozzarella and also ricotta.

i love the variation of taste and texture, but you can use any kind! i do recommend vegan mozzarella if possible though.

Easy Vegan Tortellini Bake cooks in the oven covered with aluminum foil for 23 minutes. then, you can remove it and bake another 10-12 minutes or until the vegan cheese is nice and melty.

covering the tortellini bake with aluminum foil will ensure the tortellini bakes well and is nice and tender.

as for marinara, you can use homemade or your favorite store-bought. my favorite marinara ever is Rao’s, but i didn’t have any on hand.

whether you make your own or buy some, you’re going to need 25 ounces. veggie broth adds a little more necessary liquid for cooking and you need 1 cup.

also, i used a large, round pie dish for this bake, but feel free to use a different baking pan! i wanted the tortellini to be on top of each other, almost like a casserole.

Ingredients

  • 18 ounces vegan tortellini

  • 25 ounces vegan marinara

  • 1 cup vegetable broth

  • 1 bag shredded vegan mozzarella

  • 5 ounces vegan ricotta

Directions

  • preheat the oven to 375 degrees.
  • add the tortellini to a baking pan (used a large round one) and add the liquid.
  • mix around until all of the tortellini is covered with liquid for the most part.
  • add the cheese on top and cover fully. place aluminum foil on top and bake at 375 for 23 minutes.
  • remove the aluminum foil and bake uncovered for another 10-12 minutes, enjoy!

  1. Hi! I purchased a package of Kite Hillโ€™s Spinach Tortellini and looked for a baked tortellini recipe. Yours was perfect. I followed it exactly but halved the amounts. I used Daiya mozzarella and Kite Hill ricotta. It was so good! Thanks for making such an easy, yummy recipe! We thoroughly enjoyed it!
