Easy Vegan Sugar Cookie Cake…HELLO! this is just the best dessert in the whole wide world, and ya need it in your life. this cake is a lightened up version of a decadent classic and trust me, it still tastes very indulgent. the cake is made with minimal and wholesome ingredients, so everyone will love them!

as always, i kept everything super simple for you. between the ingredients and prep process, the entire thing is a breeze.

sprinkles of course always make desserts more fun and i made the easiest vegan cream frosting to go on top. for the frosting, you just need vegan cream cheese, vanilla extract and maple syrup.

i mean, who doesn’t love sugar cookies?! the cake is the perfect hybrid of cake and cookies. the texture is super fluffy and there’s a slight fudgy component too.

you’re going to need gluten-free all purpose flour along with almond flour too. together, i think these flours create the most dreamy cake.

as far as subs, this is the only way i’ve tried the cake, so you do sub at your own risk my friends :). you can always try a different flour, but i can’t guarantee that the texture will be the same as mine.

  • all purpose gluten free flour (used Trader Joe’s brand)

  • almond flour

  • baking powder

  • coconut sugar

  • flax eggs

  • almond extract

  • apple cider vinegar

  • dairy free milk

  • vegan cream cheese

  • maple syrup

  • sprinkles

you don’t have to make my frosting because store-bought will be just as good. to be honest, I kind of wish i had used store-bought, i just didn’t have any on hand.

simple mills vanilla is my favorite as you probably know by now lol. anything will taste good though.

Ingredients

  • 1 and 1/2 cups gluten-free all purpose flour blend

  • 1 cup almond flour

  • 1/2 cup coconut sugar

  • 1/2 tbsp baking powder

  • 1/2 tsp almond extract

  • 2 flax eggs (2 tbsp flax meal mixed with 6 tbsp water)

  • 1/2 tbsp apple cider vinegar

  • 1 cup unsweetened dairy free milk

  • frosting
  • 1 cup vegan cream cheese

  • 2-3 tbsp maple syrup

  • 1/2 tsp vanilla extract

Directions

  • preheat the oven to 350 degrees. add all dry ingredients to a bowl and then mix in the wet ones.
  • mix until a thick batter forms and pour into an 8 x 11 baking pan. bake at 350 degrees for 25 minutes.
  • let the cake cool completely and then add the frosting. you can garnish with sprinkles too!
  • store in the fridge or freezer in a airtight container and enjoy.

  1. Oh my god, so good. I was in amazed by the texture of this cake! It’s really soft and moist without being gummy. I used coconut butter as the frosting instead of the cream cheese one, and it melted a little over the warm cake and was SUPER good! I will definitely be making this again!
