hey hey hey! happy friday eve. let’s celebrate this fine occasion with some Easy Vegan Homemade Strawberry Pop Tarts. they’re honestly SO easy to put together and made in the food processor. you just need a rolling pin + your appetite.
true story, pop tarts were my everything growing up and only the strawberry ones. the other flavors were good, but those were my go to.
years later and here i am adulting & making so much healthier vegan pop tarts at home.

while they may look complicated, i promise my recipe is anything but.
if you want a fun breakfast and treat yourselves on the weekend (or any day), look no further.
honestly, i am so thrilled with how good Easy Vegan Homemade Strawberry Pop Tarts turned out based on the ingredients.
while i am all for balance, the pop tarts are delicious and indulgent but are made with real food, not the weird stuff.
the pop tarts will freeze well, so that’s always an option!

also, the flavor options are endless. while i used organic store bought strawberry jam, you can make your own or use tons of other stuffing options.
vegan chocolate hazelnut spread, mashed banana, apple pie filling, cinnamon sugar, chocolate chips and so many more things would be amazing.
you could even make a variety of flavors all at once and basically haveyouself a homemade variety pack lol.

you will want to store the pop tarts in the fridge in an airtight container, but I do recommend eating them within a couple of days because they can get soggy,
while this recipe is not gluten free, you are welcome to sub a GF 1:1 flour but it’s not going to turn out as good.
no worries though, i am working on a fail proof gf version, so just stay tuned :).
when you make the pop tarts, the key is to 1) not overstuff them and 2) seal the edges really well with your fingers and then a fork.
leakage is bound to happen no matter what, you just can’t prevent it but you can minimize it.

my pop tarts are on the smaller side, they’re roughly 3 x 3 inches. you can make larger ones, but smaller ones are not recommend because you have to leave room for the border.
after you place the tbsp of filling onto half of the squares, you have to leave a 1/4 inch border to seal the edges.
then, you can slightly wet your fingers to seal the edges so that the squares stick together.
oooooh and then i made a homemade icing for the top and it’s so pretty! the color comes from the strawberry jam BUT mainly beetroot powder.
the icing is just vegan cream cheese, maple syrup, vanilla extract, strawberry jam and a teeny tiny bit of beetroot powder.

- all purpose organic unbleached flour
- cold vegan butter
- organic cane sugar or a 1:1 sub like lakanto, which is what i used
- almond extract
- dairy free milk
- strawberry jam
- vegan cream cheese
- maple syrup
- beet root powder

Easy Vegan Homemade Strawberry Pop Tarts

Ingredients
- Crust
3 cups organic all purpose unbleached flour
1/2 cup cold butter (make sure it’s packed down)
1/3 cup 1:1 sugar sub like lakanto or organic cane sugar
1/2 tsp almond extract
.83 cup almond milk (1/3 cup + 1/2 cup)
- Filling
1 tbsp strawberry jam per pop tart
- icing
1/2 cup vegan cream cheese
1/4 cup strawberry jam
1 tbsp maple syrup
1/2 tsp vanilla extract
1/4 tsp beetroot powder
Directions
- preheat the oven to 400 degrees.
- mix the crust ingredients in a food processor until a thick dough forms.
- roll it out until about 1/4 inch thick. cut the dough into small rectangles or squares, about 3 in x 3 in.
- add 1 tbsp strawberry jam onto half of the squares while leaving a 1/4 inch border to seal the edges. then, you can slightly wet your fingers to seal the edges so that the squares stick together. lastly, seal the edges lightly with a fork.
- brush some maple syrup on the top so they get golden brown and you can poke some holes in the top, which i forgot to do. this will minimize leakage.
- bake at 400 for 22-25 minutes depending on thickness and size.
- cool down completely and whisk the icing ingredients together. glaze the cooled pop tarts and enjoy!
- store in the fridge or freezer in an airtight container.
