Deliciously Nostalgic Dunkaroo Protein Ice cream

Ingredients

  • 1 can (13.5 oz) coconut cream
    1 cup dairy-free yogurt (such as coconut or almond yogurt)
    2 scoops vanilla protein powder
    1 cup dairy-free milk (such as almond milk)
    1/4 cup maple syrup or agave syrup (adjust to taste)
    1 teaspoon almond extract
    rainbow sprinkles, as desired

    cookies
    ⅔ cup gluten-free 1:1 baking flour (such as Bob’s)
    1½ tablespoons tapioca flour
    ½ teaspoon baking powder
    ¼ teaspoon cinnamon
    Pinch of sea salt
    3 tablespoons melted vegan butter
    ¼ cup coconut sugar
    1 teaspoon vanilla extract
    3 tablespoons creamy dairy-free yogurt

Directions

  • preparation: preheat your oven to 350°F (175°C). line a baking sheet with parchment paper.


  • making the cookies: in a mixing bowl, mix together the gluten-free baking flour, tapioca flour, baking powder, cinnamon, and sea salt until well combined. in a separate bowl, mix together the melted vegan butter, coconut sugar, and vanilla extract until smooth. stir in the dairy-free yogurt until well combined.


  • making the cookies: gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. if it’s too wet, add a little more flour and if it’s too dry, add a little bit more yogurt. roll the dough into small balls, about 1 tablespoon each, and place them on the prepared baking sheet.
  • making the cookies: flatten each ball slightly and bake in the preheated oven for about 10 minutes, or until the cookies are lightly golden around the edges. allow the cookies to cool completely before using them in the ice cream.
  • making the ice cream: in a blender, combine the coconut cream, dairy-free yogurt, vanilla protein powder, dairy-free milk, agave syrup, and almond extract. blend until smooth and well combined. stir in rainbow sprinkles to your desired amount.

  • assembling the ice cream: pour the ice cream mixture into a parchment-lined bread loaf dish. once the cookies are cooled, gently press them into the ice cream mixture in the loaf dish. it is easier to eat if you crumble them though!

  • freezing the ice cream: place the dish in the freezer and let it freeze for about 4-6 hours, or until firm.

  • serving: scoop the creamy dunkaroo frozen protein yogurt ice cream with homemade cookies into bowls or cones and enjoy!

  • storage: to store the dunkaroo frozen protein yogurt ice cream with homemade cookies, cover the dish tightly with plastic wrap or aluminum foil and place it in the freezer.
  • this will help prevent freezer burn and maintain the freshness of the ice cream. when ready to enjoy, simply remove the dish from the freezer and let it sit at room temperature to soften slightly before scooping.
