brussels sprouts don’t always get the attention they deserve but when you prepare them the right way, brussels sprouts are dreamy.
Crispy Vegan Parmesan Smashed Brussels Sprouts are first boiled for ten minutes. this is a very important step, because they have to tenderize before being placed in the oven.
after the brussels sprouts are boiled, they can be tossed with avocado oil or extra virgin olive oil.

i also add sea salt, pepper, garlic powder and onion powder. you won’t need a lot of sea salt though because the vegan parmesan cheese is salty.
as far as parmesan cheese goes, Alex and i both prefer violife! you can grate some on top or add shaved pieces like i did.
if you don’t care for vegan parmesan cheese, you are always welcome to try something else. mozzarella would be great along with vegan goat cheese or something!

Crispy Vegan Parmesan Smashed Brussels Sprouts

Ingredients
1 lb brussels sprouts
2 tbsp avocado oil
1 tsp garlic powder
1 tsp onion powder
sea salt and pepper to taste
vegan shaved or grated parmesan cheese
Directions
- pre heat the oven to 425 degrees.
- boil the brussels sprouts for 10 minutes until tender. rinse, drain and then, add the avocado oil, and seasonings. toss well until evenly coated.
- then, carefully take a drinking glass or cup and press down to “smash” the brussels sprouts and slightly flatten them.
- bake at 425 degrees for 15 minutes. carefully remove the brussels sprouts, flip them and bake another 12 minutes.
- remove the Brussels sprouts and add the parmesan cheese to the tops.
- place back in the oven for a few more minutes for the cheese to melt, serve and enjoy!
