Baked Peanut Butter and Banana Chocolate Chip Oats is the best of the best when it comes to breakfast OR dessert!

the recipe is delicious AND you make this in a blender yโ€™all! ah, my absolute favorite, less of a mess and the easiest of recipes.

you donโ€™t even need flour for this recipe, instead youโ€™re going to use oats! i used one degree organics, but you can use any brand you want!

while Baked Peanut Butter and Banana Chocolate Chip Oats are packed with chocolate chips, you can use just about any add ins you would like.

the base of the flavors are peanut butter and banana, hence the title of the recipe.

then, if you don’t want to use chocolate chips, you can omit them or replace with something else.

berries would be yummy as would sprinkles, walnuts or really anything that goes well with banana and peanut butter.

just about everything goes well with banana and peanut butter, so i can only imagine the options are plentiful.

to make Baked Peanut Butter and Banana Chocolate Chip Oats, i used a single serving size ramekin, so this recipe is only meant for one. 

you could also probably turn this into a giant cookie, but the batter is on the wetter side just to let you know. the baking time wouldnโ€™t be as long either as it would be more dispersed.

to bake the oats in the ramekin, i baked them at 350 degrees for 28 minutes. the texture is PERFECT. itโ€™s soft and a little fudgy but baked through very well.

Ingredients

  • 1 cup rolled oats (gluten free)

  • 1/8 cup runny peanut butter

  • 1/2 tsp baking powder

  • 1/2 tsp vanilla extract

  • 1 and 1/2 overripe small bananas

  • 1/2 cup dairy free milk

  • chocolate chips to add in

Directions

  • preheat the oven to 350 degrees.
  • add all ingredients but the chocolate chips to a blender and blend until a smooth batter forms. you can always add more oats or more dairy free milk to achieve perfect texture.
  • then, fold in the chocolate chips, transfer to an oven safe ramekin and bake at 350 for 28 minutes.
