Amazing Protein Cookie Dough Peanut Butter Eggs

hey there, peanut butter chocolate lovers!

today, we’re diving into the realm of homemade treats with a twist.

ever craved those classic reese’s peanut butter eggs but wished for a healthier and vegan alternative?

well, i’ve got just the thing for you: amazing protein cookie dough peanut butter eggs!!

what sets these gems apart from the other recipes?

let’s break it down.

first off, these eggs are packed with protein thanks to the addition of vanilla protein powder.

not only does this give them a nutritional boost, but it also adds a satisfying doughy texture that perfectly complements the creamy peanut butter center.

but that’s not all – we’re taking things up a notch by using medjool dates instead of traditional sweeteners.

these natural wonders not only provide mild sweetness but also lend a chewy texture to the dough.

paired with the rich peanut butter flavor, it’s a match made in snack heaven!

now, let’s talk chocolate.

i used sugar free lakanto monk fruit sweetened chocolate chips, but you can use whatever you like!

to keep these on the lighter side, 100% cocoa chocolate chips would be great but use anything :).

when it comes to texture, these eggs are pure perfection.

they’re soft, chewy, and oh-so-satisfying, with just the right amount of doughy-ness from the chocolate coating.

they have a texture and flavor that’ll have you coming back for more, time and time again.

wondering how to store these little balls of bliss?

it’s simple – just pop them in the fridge or freezer for a cool and refreshing treat whenever the craving strikes.

and if you’re not feeling the easter vibe, no worries!

you can easily shape the dough into whatever your heart desires – think bars, balls, or even squares.

now, let’s chat about the nutritional benefits.

these protein-packed peanut butter eggs are not only delicious but also good for you.

with the added protein from the vanilla protein powder and the natural sweetness from the dates, they’re such a good snack.

plus, they’re gluten-free and dairy-free, making them suitable for a wide range of dietary preferences.

Amazing Protein Cookie Dough Peanut Butter Eggs

Recipe by MaryCourse: Desserts, No Bake

Prep time

yields 8-10 eggs depending on size!

  • 3/4 cup medjool dates
1/2 cup peanut butter (ensure it’s runny or thin out with melted coconut oil)
    1/2 cup vanilla protein powder
    1/2 cup gluten-free oat flour
    1 tsp vanilla extract
    1/4 cup dairy-free yogurt
3-5 tbsp dairy-free milk (start with three tablespoons)
1/3-1/2 cup chocolate chips (adjust to preference)

    for coating:
1 and 1/4 cup melted chocolate chips (sugar-free chocolate chips like lakanto can be used)

  • in a blender or food processor, combine the medjool dates, peanut butter, vanilla protein powder, gluten-free oat flour, vanilla extract, dairy-free yogurt, and 3 tablespoons of dairy-free milk. blend until a dough-like consistency forms. if the mixture is too dry, gradually add more milk, one tablespoon at a time, until desired consistency is reached.
  • once the dough is formed, fold in the chocolate chips until evenly distributed.
  • shape the dough into egg shapes using your hands or a mold. place them on a parchment-lined baking sheet.

  • freeze the shaped eggs for at least 2 hours, or until firm.

  • in a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval until smooth.

  • remove the frozen peanut butter eggs from the freezer and dip each one into the melted chocolate, ensuring they are fully coated. place the chocolate-coated eggs back onto the parchment-lined baking sheet.

  • freeze the chocolate-coated eggs for another hour, or until the chocolate is set.

  • once set, transfer the peanut butter eggs to an airtight container and store them in the fridge or freezer until ready to enjoy.

  • serve and enjoy your amazing protein cookie dough peanut butter eggs whenever you need a delicious and nutritious treat!
