Amazing Protein Cookie Dough Peanut Butter Eggs

yields 8-10 eggs depending on size!

Ingredients

  • 3/4 cup medjool dates
    1/2 cup peanut butter (ensure it’s runny or thin out with melted coconut oil)
    1/2 cup vanilla protein powder
    1/2 cup gluten-free oat flour
    1 tsp vanilla extract
    1/4 cup dairy-free yogurt
    3-5 tbsp dairy-free milk (start with three tablespoons)
    1/3-1/2 cup chocolate chips (adjust to preference)

    for coating:
    1 and 1/4 cup melted chocolate chips (sugar-free chocolate chips like lakanto can be used)

Directions

  • in a blender or food processor, combine the medjool dates, peanut butter, vanilla protein powder, gluten-free oat flour, vanilla extract, dairy-free yogurt, and 3 tablespoons of dairy-free milk. blend until a dough-like consistency forms. if the mixture is too dry, gradually add more milk, one tablespoon at a time, until desired consistency is reached.
  • once the dough is formed, fold in the chocolate chips until evenly distributed.
  • shape the dough into egg shapes using your hands or a mold. place them on a parchment-lined baking sheet.


  • freeze the shaped eggs for at least 2 hours, or until firm.


  • in a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval until smooth.


  • remove the frozen peanut butter eggs from the freezer and dip each one into the melted chocolate, ensuring they are fully coated. place the chocolate-coated eggs back onto the parchment-lined baking sheet.




  • freeze the chocolate-coated eggs for another hour, or until the chocolate is set.


  • once set, transfer the peanut butter eggs to an airtight container and store them in the fridge or freezer until ready to enjoy.


  • serve and enjoy your amazing protein cookie dough peanut butter eggs whenever you need a delicious and nutritious treat!
