7 Ingredient Sweet Potato Burgers

i am team vegan burgers for life. forget the meat, i’m so about the veggie burger life and all of the nutritional benefits that come with it. there are tons of amazing store-bought vegan burger brands, but sometimes, it’s really fun to just make your own. 7 Ingredient Sweet Potato Burgers are zero fuss and the easiest ever to put together.

instead of grating the sweet potato, i cut a large, raw sweet potato into cubes and placed it in the food processor. blend on high until a fine & grainy texture forms. there ya have it! easy and minimal effort.

if you don’t have any sweet potatoes on hand, i bet carrots would work well too! same situation, just throw em in a food processor and blend until a fine and grainy consistency.

you can serve these gems on buns or sandwich style like i did. the hubs was craving a hearty sourdough sandwich, so i was like ok, i have something i can put together for you.

what do you need for this recipe

  • 1 large sweet potato
  • flax meal
  • tahini
  • red onion
  • vegetable broth
  • garlic
  • sea salt

if you’re not a fan of tahini, you could replace it with peanut butter. if you do, i recommend adding some finely minced ginger and liquid aminos too. that trio is heavenly!

all of the spicy mustard, sliced tomato, lettuce and sourdough accompanied with delicious sweet p patties are making our thursday night that much better. Alex is on night shifts and takes his dinner to work, so this is a super portable recipe that keeps really well in the fridge.

Ingredients

  • 2 cups finely grated sweet potato

  • 1/2 cup flax meal

  • 1/3 cup chopped red onion

  • 1/4 cup creamy tahini

  • 1/2 cup vegetable broth

  • 1 tbsp finely minced garlic

  • 1/2 tsp sea salt

Directions

  • cut a large, raw sweet potato (without skin) into cubes and placed it in the food processor. blend on high until a fine grainy texture forms.
  • add to a bowl along with the rest of the ingredients and mix well until a thick mixture forms.
  • shape into medium size burgers and place on a parchment lined baking tray. bake at 350 degrees for 24 minutes. cool completely so the burgers’ texture sets.
